Cocktail friday- “PIÑA COLADA & PIÑA COLADA CUPCAKES”

Summertime is pretty much upon us and one of my favorite summery drink is a nice strong Pina colada however, today i’m going to give you a bonus treat (cupcakes).

INGREDIENTS FOR THE DRINK:

  1. 1.5 Oz. of Malibu Rum
  2. 2 Oz. Coconut Milk
  3. 2 Oz. Pineapple Juice
  4. A bowl of ice cubes
  5. Pineapple wedge

DIRECTIONS: 

  1. Place all ingredients into an blender with 5-6 ice cubes.
  2. Pour into tall glass and serve with Pineapple wedge (optional).

INGREDIENTS FOR CUPCAKES:

  1. 1/3 Cups of Malibu Rum
  2. 3/4 Cups of Coconut Milk
  3. 1/4 Cups of Pineapple Juice
  4. 1 Teaspoon of Vanilla
  5. 1 1/2 Cups of all purpose flour
  6. 1 Teaspoon of baking soda
  7. 1/4 Teaspoon of salt
  8. 1/2 Cups of unsalted Butter
  9. 1 cup + 3 teaspoons of sugar
  10. 3 eggs
  11. 1 Cup of shredded coconut
  12. 1 Cup of diced pineapple

INGREDIENTS FOR THE FROSTING:

  1. 8 Oz. Cream cheese
  2. 1/4 Cups of unsalted butter
  3. 2 Cups of powdered sugar
  4. 3 Tablespoons of coconut cream

DIRECTIONS FOR CUPCAKES:

  1. in a small bowl combine rum, coconut milk, pineapple juice and vanilla (set aside)
  2. In a medium bowl whisk together flour, baking soda and salt (set aside)
  3. In a large bowl beat butter and sugar until light and fluffy
  4. Add eggs to sugar mixture, and the rum mixture. beat well after each addition
  5. Fold/ Throw in the Coconut and pineapples
  6. Fill cupcake lines 3/4 full
  7. Bake at 350F for 25 Mins

DIRECTION FOR THE FROSTING:

  1. Mix cream cheese and butter together till light and fluffy
  2. Mix powdered sugar a little bit at a time
  3. Mix in Coconut cream
  4. Pipe/spread frostings on cupcakes and enjoy!
